I don’t EVEN know with that recipe title. This is just one of those times I’m going to give something a ridiculous name, hope you trust me and make the recipe and then ask for forgiveness later. {Sorry!}

But honestly, the restaurant that inspired this particular salad named it after the street it’s located on, so, apparently they were at a loss too. The lovely little gem I’m speaking of is Northstar Café in Columbus, Ohio.

I could seriously go on and on and on about this place. Maybe it’s the casual chic atmosphere, the fresh, local food, the ambient temperature water dispenser (yeah, I’m weird like that) or the cookies that are literally as big as your head that I may have indulged in a few times (tip: get the oatmeal raisin).  I dunno that I can pinpoint one thing that makes it amazing, but I know I just can’t get enough.

So for the past year, I’ve been going there pretty much every Wednesday, on a mission to try everything on the menu. My Northstar Café discovery came about because, during that time, I have been making the commute to Columbus from our home of Dayton, a 90 minute one way drive, three times a week. It didn’t take long for me to realize it made more sense to stay in Columbus on the days I worked back-to-back.

Well, being cooped up in a hospital for 36+ hours was driving me a little ca-ra-zy. So my smarter half {the one who told me not to take the job in Columbus (gah! the idea sounded so good in my head!), the one who corrects all my run-on sentences, the one who writes stuff like this while I blab about salads forever} suggested I start getting out of there for dinner. Thanks to my trusty little UrbanSpoon app, I found this place and I’ve never looked back.

But alas, all good things must come to an end.

Because soon I’ll be starting a new job back in Dayton. And while I will certainly not miss the commute, I’ll miss my little weekly Northstar date. In an effort to bring the deliciousness back home, I did my best to recreate one of their classic salads. So here goes…

Every salad needs to start with some greens, right? So first we’re gonna add some classic romaine, mixed with a little crisp cabbage.

Remember that simple, super juicy roasted chicken from last week? I may have been holding out on you a little. You didn’t ACTUALLY think I wasn’t gonna fancify that, did you? Pull it off the bone and throw a little on top.

Next, veg it up with some corn, green onions, tomatoes and avocado. OK, 50% of those are actually fruits… but you know what I mean :)

And now things are going to get a little crazy weird up in here. We’re going to top it off with roasted almonds, goat cheese and dates. Just trust me and go with it.

Dress it with some champagne vinaigrette and you’ve got yourself one weirdly delicious salad.

The mix of ingredients is a little uncanny, but they come together for a fresh burst of amazing flavor! The crunch from the greens and almonds, a little sweetness from the corn and dates and and creaminess of the goat cheese and avocado makes for one intense combination!

So if you can’t make it to Columbus for the real thing, give this a whirl. And if you can make it to Columbus, hit up Northstar Café some time, you really can’t go wrong. Trust me, I know! :)

Recipe type: Main
Serves: 4
For the vinaigrette (makes 4-6 servings)
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons champagne vinegar (or substitute white wine vinegar)
  • 1 tablespoon water
  • 1 tablespoon honey
  • ½ teaspoon dijon mustard
  • 1 small clove garlic, minced
  • ¼ teaspoon Herbes de Provence
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
For the salad:
  • 8 ounces roasted chicken breast (get a recipe here!), cooled
  • 1 ear of corn, cooked, kernels removed (or use ¾ cup frozen corn, thawed)
  • 8 cups romaine lettuce, chopped
  • 4 cups green cabbage, thinly sliced
  • 1 cup cherry tomatoes, quartered
  • 1 avocado, diced
  • ½ cup green onion (green part only), sliced
  • ½ cup dry roasted almonds, very roughly chopped
  • 4 Medjool dates, pitted and thinly sliced
  • 2 ounces soft goat cheese
  1. Pre-cook the roasted chicken breast and ear of corn, allow to cool.
  2. Whisk the salad dressing ingredients together in a bowl.
  3. Wash and chop the lettuce and cabbage, dress with ¼ cup of the vinaigrette, and place on 4 serving dishes.
  4. Pull the chicken from the bone, serving about 2 ounces to each salad.
  5. Remove the corn off the cob, cut the cherry tomatoes, avocado, green onion, almonds and dates and distribute evenly between each serving.
  6. Top with the goat cheese and serve with additional vinaigrette to taste.
Precooking the chicken and corn helps this meal come together quickly on a weeknight!
