A juicy turkey zucchini burger topped with ooey-gooey brie cheese, sweet caramelized onions and apples. Put it on a bun and you’ve got five food groups in one burger. Boom.

Random info alert: according to urban dictionary, Boom is the name of a game created at my alma mater.

And now that I’ve wasted half an hour of my day reading urban dictionary….

Back to the burgers. So, this was supposed to be the summer of the zucchini for me. After we traded in our postage stamp sized yard and moved to suburbia last summer, I got all kinds of crazy ideas about how I was going to start being a true Ohioan, growing zucchinis as big as my arm in my backyard garden. I was going to have such a bountiful harvest that I would be baking and freezing enough zucchini bread to last for a year. I would bring in baskets full of those green beauties to work, giving them away because I had so many.

Yeah, that zucchini is from the grocery store. Unfortunately, the bigger yard didn’t come with a few extra hours in the day too. So a year later, I do not have a garden and I still have approximately 823 boxes left to unpack <— embarrassing but true.

Earth, can you please just slow down the spin cycle a smidgey-widgey? For realz, how’s a girl supposed to have enough time to work, wrangle babies, start a blog, unpack, grow a garden AND keep up on urban dictionary? Not. Enough. Hours.

To all the rockstars out there trying to use up your homegrown zucchini:  #1 I am jealous, #2 zucchini donations will be gladly accepted, #3 shred some of that up and put it in your turkey burger, pronto.

Then grab some brie cheese and some bright, tart granny smiths.

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 2 medium granny smith apples, peeled and cut into matchsticks
  • 1 pound ground turkey
  • 4 ounces zucchini, shredded
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • Cooking spray
  • 5 ounces brie cheese, rind removed
  • 1 tablespoon maple syrup
  • 5 whole wheat hamburger buns
INSTRUCTIONS
  1. Heat a skillet over medium-high heat. Add the olive oil and onions and cook, stirring constantly, for about 5 minutes, and the onions begin to soften.
  2. Reduce the heat to medium and continue to cook for 10 minutes.
  3. Heat a large skillet or grill to medium heat for cooking the burgers.
  4. Prepare the burgers by mixing the turkey, shredded zucchini, garlic powder, onion powder, salt and pepper. Form into 5 patties.
  5. Add the apples to the onion mixture and continue cooking for 10 additional minutes.
  6. While the onions and apples continue cooking, spray the large skillet (or, if using a grill, spray the burgers) with a little cooking spray. Reduce the heat to medium-low and cook the burgers for about 5 minutes each side, until no longer pink in the center, or a minimum temperature of 165°.
  7. Turn off the heat for the burgers, top with the brie cheese and cover to allow it to melt.
  8. Turn off the heat for the onion and apple mixture and stir in the maple syrup.
  9. Assemble the burgers and serve.
NOTES
The zucchini can be used both peeled or unpeeled. I used peeled to avoid any disapproving looks from the little ones.
