Actually spring + sunshiny days + beach + superfood shamrock smoothie would be the best ever.
A girl can dream, right?
Now, I know one thing March did bring was the return of the McDonald’s Shamrock Shake. But guys, trust me, you don’t really want to drink that. So let’s knock out any McDonald’s cravings by making a healthy yet super delicious version of that shake at home, shall we?
Meet the lovely ingredients in the Superfood Shamrock Smoothie:
Matcha Green Tea – antioxidant powerhouse, energy booster and mood enhancer. If you’re not familiar with Matcha, this post will teach you pretty much everything you need to know!
Spinach – packed with vitamin K, vitamin A, magnesium, folate and iron. Plus fiber and even protein! If Popeye ate it by the can and grew those muscles, you know it must be good for you!
Avocado – loaded with heart healthy monounsaturated fats, lots of fiber and more potassium than a banana! And they give a smoothie that thick and creamy shake consistency.
Chia Seeds – the best plant source of those omega-3’s, I might be a teensy bit obsessed with these cute little guys. Chia seeds are also great to thicken smoothies and they keep you feeling full longer!
Of course, I couldn’t call this a Shamrock Smoothie without the mint! But no artificial flavored stuff here, just a few fresh and beautiful green leaves of the real thing brighten up the flavor of this smoothie.
Cheers to a superfood spring!
- 2 cups baby spinach
- ¾ cup apple juice
- ¼ cup fresh mint leaves
- ½ avocado
- 3 cups green grapes (frozen for a thicker smoothie)
- 1 teaspoon matcha green tea powder
- ½ tablespoon chia seeds
- Place the spinach, apple juice and mint in a blender and blend until smooth.
- Add the avocado, green grapes and matcha green tea powder, continue blending.
- Add the chia seeds and stir or blend, depending on your preference.
