I recapped my recent vacation last week, full of all sorts of decadent foods. And while I enjoy getting away and trying new things, my body can only take a few days before it says “pleeeeease feed me healthy food”. I tried to think back to the number of green things I ate on vacation and I came up with… two. TWO! Yikes! Time to get back into the swing of the healthy eating thang, for sure. And what better way than a delicious salad?

One of my favorite summer salads is the Strawberry Poppyseed and Chicken Salad from Panera Bread. I stopped in earlier this summer for a quick lunch on the run one day, super excited that the salad had made its summer debut. And while I’ve always been a little wary of the fat-free salad dressing it came with, this year I noticed an overwhelming artifical-ish flavor in the dressing.

I whipped out my phone to search the ingredients. Culprit: stevia. I don’t know what it is with me and stevia; we just don’t mesh. To me, it tastes sort of bitter and overly sweet at the same time.

So I did this food blogger/recipe maker-upper thing that I do and set out to make my own version at home.

Seriously, summer. Please don’t go. I’m not ready. There have not been nearly enough backyard BBQs or lazy pool days or juicy watermelon drips or drive-in movies or bike rides or… fruit and poppyseed salads.

For the meat lovers out there, feel free to add some grilled chicken breast.

Blueberry lovers, watch out for this little one.

INGREDIENTS
For the salad
  • 6 cups romaine lettuce
  • ½ cup strawberries
  • ½ cup blueberries
  • ½ cup pineapple
  • ½ cup mandarin oranges (canned in juice)
  • ¼ cup pecan pieces
For the dressing (Serves 6)
  • ½ cup greek yogurt
  • ¼ cup honey
  • 1 Tbsp. vinegar
  • 1 tsp. finely minced shallot (onion would work fine)
  • ½ Tbsp. poppyseeds
  • ¼ tsp. salt
INSTRUCTIONS
  1. Wash and cut the lettuce and fruit into bite sized pieces.
  2. Divide the lettuce between two bowls and top with each with half of the fruit and nuts.
  3. In a separate bowl, mix together the salad dressing ingredients. Whisk together thoroughly.
  4. Top each salad with 2 Tbsp. of the salad dressing.

    Love this, especially given all the blueberries in our yard! And I completely agree on the artificial sweetener issue… I have refused to touch any form of it in well over 10 years and feel so much better. Those on “diets” don’t understand but I can tell from the way I feel it just doesn’t do good things to your insides.
