Once Twice upon a time, I owned an espresso machine. My first one was a college buy, a really cheap Bed Bath and Beyond floor sample markdown that I came across one weekend. Perfect price for a college kid, and, let me tell you, that little guy got a lot of use. Late night study sessions were always just a teensy bit better with the help of a mocha or latte.
Espresso machine #1 had a relatively decent life span. It survived through two years of college and into my first year of med school. Until the day there was an incident involving some sort of high pressure explosion that ended with espresso grounds ALL OVER the kitchen. My little espresso machine was never quite the same after that, and I soon decided it was time to lay him to rest.
Shortly after the explosion, Christmas came around and my mom bought me espresso machine #2, complete with cute little espresso cups. I figured the machine #1 debacle was related to the quality, so I stepped it up a notch with machine #2. I mean, nothing crazy, but definitely an improvement.
Welllllll, I don’t know what on Earth I do to these things, but espresso machine #2 had an even shorter life span than #1.
At that point, I decided I was just not meant to own and/or operate an espresso machine. So I did what any frugal, chronic espresso-machine-breaking girl would do. I headed to IKEA, spent $2.49 on one of these, and started faking the fancy coffee thing.
Which is awesome news for all of you out there who want to make fancy coffee at home too! Because this recipe requires no special espresso making equipment. If you happen to own a sweet little IKEA milk frother, you can get that nice foamy top, but, if not, I promise this peppermint mocha will be just as delicious.
To make this recipe, I start with my homemade hot cocoa mix. It’s refined sugar free and, depending on your milk preference, can be made vegan. To that, I add some strong brewed coffee and little peppermint extract. If you’re not into coffee, don’t worry, this makes an equally tasty peppermint hot cocoa!
I can’t think of a better way to stay up late wrapping Christmas presents than with a warm, chocolatey, pepperminty mocha giving me a little extra boost. Here’s hoping my IKEA milk frother survives through a winter of making these!
- 6 ounces water
- 5 tablespoons dark roast coffee
- 8 ounces milk (use almond/soy/coconut milk for vegan)
- 2 tablespoons homemade hot cocoa mix
- ⅛ teaspoon pure peppermint extract
- Using a regular drip coffee maker, make the strong brewed coffee using 6 ounces of water and 5 tablespoons dark roast coffee.
- Heat 8 ounces milk in the microwave for 2-3 minutes.
- Stir in the the homemade hot cocoa mix until dissolved.
- Add the coffee and peppermint extract, stir until combined.
- Froth using a milk frother, if desired.
- Pour into two cups and serve.
