A strange thing happened the first time I tried to make overnight oats.

I had followed the recipe to a T. I lay in bed that night, barely able to sleep, awaiting my next breakfast. Waking the next day, I rushed to the refrigerator to try my scrumptious new oatmeal creation, only to be completely disgusted with the results. One of the very few times in my life that it wasn’t love at first bite.

I chalked it up as a kitchen fail (definitely NOT a first) and went on to make my regular oatmeal for the morning. But those pretty Pinterest pictures of cutesy-rustic Mason jar overnight oats parfaits kept dancing in my head. And then there was the allure of being able to have oatmeal for breakfast at work without having to hunt down a microwave safe bowl or clean the break room microwave when the oatmeal overflowed out of said microwave safe bowl, which was inevitably too small.

Unwilling to let one failed attempt thwart my Pinterest dreams, the overnight oats experiment began.

The first, and most important, thing I learned is that both instant and old fashioned oats will work. The first recipe I tried called for instant and, having never made them before, I wasn’t sure if they were necessary to achieve the final result. So for trial #1 I used instant, which I don’t really like hot, so I’m not really sure why I thought it would be different cold??

Well, according to google, instant oats are not necessary for success in overnight oats. And because I read it on the internet, it must be true, so for trial #2 I went with old fashioned oats. Ahhhh, much better.

Next up was working on the consistency. Trial #1 was practically drinkable – it was so runny. I prefer my oatmeal all thick and hearty like, so this was obviously not gonna work for me. And getting this part right took quite a few so-so tries before I got it right for my taste.

But the end result is so worth it: the perfect way to enjoy oatmeal on a steamy day. Cool, creamy and topped with the fresh juiciness of a delicious summer peach. And for some crunch, add some sliced almonds or honey nut granola. Give it a try before this sweet summer slips away!

INGREDIENTS
  • ½ cup oats - instant or old fashioned (whichever you prefer)
  • ⅓ cup plain yogurt
  • ½ Tbsp. chia seeds
  • ½ Tbsp. honey
  • ⅓ cup water
  • ½ fresh peach
INSTRUCTIONS
  1. Mix the oats, yogurt, chia seeds, honey and water. Place in a refrigerator safe container.
  2. Top the mixture with diced peach.
  3. Refrigerate overnight.
NOTES
The mixture will thicken overnight as the oats and chia seeds absorb the liquid.
Adjust the water content to achieve your desired consistency.
I sometimes use frozen fruit and decrease the water to ¼ cup to account for melting.

      You could probably substitute flax seeds, although I have not personally tried it. Chia seeds can sometimes be hard to find, especially in small packages if you are just wanting to try it out. I really include the chia seeds mostly for their nutritive properties. They are a great plant based source of omega-3 fatty acids, which are good for cardiovascular health, they have calcium and antioxidants as well and they are also good for satisfying the appetite! For the sake of the recipe, it would work just as well if you left them out :)
