Honey Nut Granola

Honey Nut Granola - Clusters of oats, nuts and honey perfection. 90 calories. | realfoodmommd.com

Hands down, most made recipe in our home, right here.

May have something to do with a certain person who shall remain nameless (rhymes with: Schmerek) eating half the pan before it makes it into the jar.

Or a wee-one (think: peanut butter cups) who would live on yogurt and granola if I let her.

Without further ado, our family’s favorite granola recipe.

Start by putting all the dry ingredients in one bowl.

In a separate bowl, start the wet ingredients by melting the butter in the microwave. Then add the honey.

And the vanilla.

Mix everything together, spread onto a lined baking sheet and pop it in the oven. Remove and let cool, batting away any husband snitchers.

After cooling, break into clusters. Add some dried fruit if your heart desires. Use for a yogurt topping or enjoy with sliced fruit and milk.

Recipe type: Snack
Serves: 18
INGREDIENTS
  • Cooking spray or coconut oil
  • 1-1/2 cups old fashioned oats
  • ⅓ cup whole wheat flour
  • ⅓ cup nuts (I use sliced raw almonds)
  • ½ tsp. cinnamon
  • pinch of salt
  • 2 Tbsp. unsalted butter
  • ¼ cup honey
  • ½ tsp. vanilla
  • ⅓ cup dried fruit
INSTRUCTIONS
  1. Preheat the oven to 350º.
  2. Line a baking sheet with parchment paper or a silicone baking mat. Lightly coat with cooking spray or coconut oil.
  3. Mix the oats, flour, nuts, cinnamon and salt in a bowl.
  4. In a separate bowl, melt the butter. Stir in the honey and vanilla.
  5. Combine the two bowls of ingredients.
  6. Pour the mixture into the center of the baking sheet, then spread in an even layer, keeping it in one large "piece". There will be space around the edges of the baking sheet.
  7. Bake for 10-12 minutes or until the edges just start to brown slightly.
  8. Let it cool completely. Break into clusters and mix in the dried fruit.
  9. Store in an airtight container.
