Apple pie ice cream - smooth, rich and creamy, bursting with fall flavor.

  • 3 tablespoons cream cheese, softened
  • ½ tablespoon butter
  • 2 small red apples, peeled and chopped, about 1-1/4 cups
  • 1 tablespoon water
  • 1 teaspoon cinnamon - divided
  • 2 tablespoons pure maple syrup - divided
  • 2 cups milk
  • 4 teaspoons cornstarch
  • 1-1/4 cups heavy cream
  • ⅔ cup sugar
  • ¼ teaspoons kosher salt
  • 1 teaspoon vanilla extract
  1. Prepare your ice cream maker for use following manufacturer instructions.
  2. Place cream cheese in a large bowl to soften. (I use a 2-1/2 quart Pyrex)
  3. Heat a small saucepan over medium heat. Add the butter and melt. Add the chopped apples, water, ¼ teaspoon cinnamon and 1 tablespoon maple syrup. Simmer until the apples are softened and the liquid is reduced to half, about 10 minutes. After cooking, place the mixture in a sealed container and refrigerate.
  4. Whisk ¼ cup milk and the cornstarch together to make a slurry and set aside.
  5. In a large pot (I use a 6 quart size), combine the remaining milk, heavy cream, sugar, salt, vanilla, 1 tablespoon maple syrup and ¾ teaspoon cinnamon. Bring to a boil and cook for 4 minutes.
  6. Add the slurry and cook for an additional 2 minutes.
  7. Pour ¼ cup of the ice cream mixture into the bowl with the cream cheese and whisk until smooth.
  8. Add the remainder of the ice cream mixture and combine completely.
  9. Cover the bowl and refrigerate until very cold, preferably overnight.
  10. Pour the mixture into the ice cream maker and process per manufacturer instructions.
  11. Gently fold the apple mixture into the churned ice cream.
  12. Transfer to a freezer-safe container and freeze until completely set.
